1.5kg chicken breast, minced.
1 cup frozen beans
1 cup frozen corn
1 1/2 cup mashed grey pumpkin. Approx 1/4 pumpkin
1 packet frozen spinach
6 tablespoons rolled oats
Stock powder - veggie or chicken.
Cook pumpkin. Mash up. Add 1 heaped tsp stock powder and ground black pepper to taste. Set aside to cool.

I know that many love Brussels Sprouts but they are also a vegetable that has a long reputation of being detested by some and are the classic vegetable that no one wants to try, especially children. Perhaps it is the odour that follows them to the table that is off-putting.
Here is my Brussels Sprouts dish that turns up the flavour dial and takes minimal time from Fridge to Finish.
Cheesy Tuscan Dip
1 small tub low fat cottage cheese
2 tablespoons Tuscan Dressing Flax Oil Waltanna Farms
Mix ingredients together in serving bowl. Refrigerate until ready to serve.
Creamy Cucumber Dill Dip
½ cup non-fat yogurt
¼ tsp. dried dill
4 teaspoons fresh lemon juice
½ cup peeled cucumber coarsely grated
Ground black pepper to taste.

(this has been taken from the original recipe. I am not so sure that peeling 1kg of artichokes happened in 10 minutes!!! Feel free to half the ingredients if you aren't up to peeling 1kg of artichokes in one go.
